Today Ellia and I finish our cook-off challenge using our secret ingredient, canned tomatoes, we unbox our toilet  paper delivery, workout from our at home gym, and get organized with a schedule!

I am actually feeling very stoked, despite all that is going on in the world with Coronavirus,  that Ellia and I get this special time together, because we haven’t had special quality time, like this, since she was a baby. Because after that she went off to school and I went off to work and it’s hard when you’re a working family to create quality time at home or create quality time with each other. Because there’s always something else that has to be done. So it feels really nice to have quality time with her.

And I also am loving the generosity that I have been seeing in the world, like how the State of New York is delaying mortgage payments for 3 months! According to the article, “The state of New York will allow some homeowners to skip their mortgage payments for three months in response to the spread of COVID-19.”

Let’s all spread some kindness and SUPPORT OUR LOCAL SANTA CRUZ BUSINESSES!!! Most restaurants and coffee shops are still open for take-out orders!

Okay yo, it is almost 2:00 and I’m gonna brush my teeth for the first time today which is shamefully admitting something that’s disgusting on the internet. But ahh. And I brushed my teeth, I’m gonna floss them and then I’m gonna go into my at-home gym and work out. Stay tuned.

What are you guys doing for fitness? I’m glad that I have a gym at home and I’m also glad that I can go outside still because going outside has been really happy.

Okay, so, cooking challenge with Elia. I am about to start my cooking challenge, we are using as our secret ingredient, canned tomatoes. So she’s kind of got a head start because hers are stewing deliciously, but I’m up next and I think what I’m gonna cook is um, vegetable noodles with super concentrated tomato sauce. Because one, Danny’s gluten-free so the taste-tester has to be gluten-free option. And two, we’re stuck at home so we’re using what we can. Like Ellia didn’t have any onions for her recipe. So we just have to make due, which is my favorite kind of cooking. So here we go. Mom! Fire! Who’s gonna win? Who’s gonna win? Who’s gonna win? I’m gonna win. I messed it up.

Okay, first thing’s first, wash hands. This is a very important task, washing our hands. Sweet knife skills, Ellia. Don’t say that. Wait, wait stop it then delete that one and then don’t say anything. Okay. Did you stop it? Yep. Did you delete it? Yes I did. No, you didn’t. Yes I did. Stop, go back to cutting.

Where are we at with your recipe? What’s in so far, what’s in so far? The thyme, the garlic and the tomatoes and now I’m gonna do two tablespoons of olive oil. Is this the last step? Well, I’m gonna blend it and then I’m gonna put it back on heat. I am ruff chopping garlic. I don’t have to get it too small, because I’m gonna blend it much like L–Ellia did, like Lellia. Much like Ellia did when she was making hers. We’re just trying to fuse the flavor into our canned tomato sauce. Ellia said not to blend it, but I think I’m going to blend it because I personally like a creamy smooth soup. So, we’ll see. I think it’s just gonna be toe-to-toe on whose tomato soup reigns.

And what should we serve with it? I have cabbage salad. Should we make cream cheese? I don’t know if we have cheese. We’re about to plate. No, we don’t show mine. It’s tomato soup off. Wait look at me, mine reduced, so it’s a ball and it looks so–yucky. It’s going to be so good though. Tomato soup off. Danny’s gonna be the judge.

Okay, Danny’s is blind taste test. For the tomato soup cook off. Pretty good. Little salty. I like this one. Yeah! I accidentally over-salted it. But I do love the lemon zest in it. And I accidentally cooked it too long and I reduced it. And it got really small, we only did make one. Did you now whose that was? I had no idea. But, I really like this one because the lemon zest brightens it up. Hmm, lemon zest is key.

Oh my God, I’m so excited. Our toilet paper finally arrived and now I can be amongst the others to celebrate. What is this? What is this? What is this? What is this? What is this? It’s like toilet paper for giants.

Okay, this six pack is not going to maintain itself. So let’s go for a little at-home gym workout. Feeling super fortunate that we have an at home gym right now, oh, I almost spilled my water all over me. Okay, what workouts are you guys doing to stay fit? Will you share them with me and how do you get a six pack I’ve never had one but maybe I should try since I’m gonna be stuck at home for two weeks. Can I do it in two weeks? No food, just exercise, here we go.

Holy cow, I guess I have a lot of aggression or something, built up over the last few days of being cooped up at home. I won’t be getting mother of the year. I am actually super stoked though that we get this special time together because I haven’t actually had special quality time as we are having time as we are having now, since she was a baby. Because after that she went off to school and I went off to work and it’s hard when you’re a working family to create quality time at home or create quality time with each other. Because there’s always something else that has to be done. So, that feels really good. That we’re doing what we can from home and that’s something else that has to be done is not urgent because we can’t do it all, we can’t do it all right now. So, that feels really nice. And I, will be better, I won’t swear at my kid I promise, I won’t. I’m gonna be loving and patient and kind always, no matter how long we’re stuck with each other at home.

All right quarantine day five, workout complete. Feeling good, I am going to learn how to double jump, so if you have any tips for me Let me know. But right now I just finished on the elliptical machine. Whew, at home gym, hashtag.

Well it only took me all week to finally catch up but we finally did it and we have our schedule for schooling and Ellia’s starting off by doing her 30 minutes of reading. Which then she will follow up by writing. I think the cool thing about all this too is that it really gives people the opportunity to be creative. Like I am not a teacher but I’m having to be a teacher and Ellia is having to find ways to entertain herself and also to continue to learn while we are stuck at home. What are you guys doing to learn and create and teach?

Super interesting read. I just read that the state of New York is going to be allowing 90 days of mortgage forgiveness or not forgiveness, but delay of payment to coincide with the coronavirus right now, which is very generous actually, I don’t think it’s necessary. Well, it is necessary but it’s very generous that people are actually bonding together, the government included and financial institutions and our communities to support one another and make these really challenging times actually durable. So it really is amazing to see what comes out of times of need. It’s very heartwarming, so that’s my share of today. Day, are we on day five, day five quarantine day five. We’re flying right now. We’re flying over to Madagascar.
